Key Lime Pie Cocktail

Key Lime Pie Cocktail 


Servings – 1 drink
Prep time – less than 5 minutes

Ingredients
1 1/2 shots (2.25 oz) vanilla vodka
1/2 shot (0.75 oz) lime juice (try Rose’s sweetened lime juice!)
1 shot (1.5 oz) pineapple juice
1/4 shot cream or half and half
Limes cut into wedges
Crushed graham crackers (2 or 3 crackers is plenty)

Protocol
1. Pour a little lime juice onto a small plate, and dip the rim of the glass in the juice. Use a wedge of a lime to help spread the juice around the rim.

2. On another plate, put the graham cracker crumbs. Dip the rim of the glass into the crumbs.

3. In your shaker, add a few ice cubes, and the vodka, juices, and cream.

4. Shake a few times and pour (no ice!) into your rimmed glass.

5. Garnish with a lime wedge and enjoy!

Slow Cooker Beef & Broccoli


This slow cooker Beef & Broccoli is just as good & WAY better for you then any Chinese food restaurant's version...plus it is so easy and DELICIOUS!!




Slow Cooker Beef & Broccoli


Serves 8

A great slow cooker recipe that will rival your favorite Chinese's restaurants Beef & Broccoli

Prep Time - 10 min

Cook Time - 6 hr

Total Time - 6 hr

Ingredients
1 1/2 lbs flank steak, cut into thin strips
2 cups beef stock
3/4 cup low sodium soy sauce
2/3 cup brown sugar
2 tbsp. sesame oil
2 tbsp. garlic powder
2 tbsp. cornstarch
2 heads of broccoli (or 2 bags of frozen broccoli), cut into bite size pieces
Serve with white or brown rice

Instructions
1.In a large slow cooker lay the strips of beef in the crockpot
2.In a medium bowl combine beef stock, soy sauce, brown sugar, sesame oil & garlic powder
3.Pour beef stock mixture over the beef and toss to combine
4.Cook on low for 5-6 hours, or high for 2-3 hours, or until beef strips are just about cooked, but not overcooked where they shred
5.With about 30 minutes left take 1/2 cup of the sauce from the crockpot and add in the cornstarch stirring to combine
6.Add cornstarch mixture to the slow cooker and stir to combine
7.Add in broccoli and gently combine
8.Cook on high for and additional 30 minutes, or until sauce is thick and broccoli is cooked through
9.If sauce gets too thick add in some additional beef stock or water a 1/4 cup at a time
10.Serve over rice or on its own

Brown Sugar Pork Loin


Grilling is a must in the summer and this Grilled Pork Tenderloin is a favorite for sure!


Brown Sugar Grilled Pork Tenderloin
Serves 10
A delicious grilled pork tenderloin with a sweet little kick
Prep Time - 30 min
Cook Time - 25 min
Total Time - 1 hr
Ingredients
3 lbs Pork Tenderloin (2 - 1 1/2 lb tenderloins)
1 tbsp. extra virgin olive oil
1 tbsp. brown sugar
1 tbsp. chili powder
1 tbsp. pepper
2 tsp salt
1 tsp sweet paprika
Instructions
1.Line a rimmed baking sheet with foil
2.Place tenderloins on foil and trim off any excess fat
3.Rub 1/2 tbsp. olive oil all over each tenderloin
4.In a small bowl combine brown sugar, chili powder, pepper, salt and paprika
5.Run spice mixture all over tenderloins
6.Let tenderloins sit with spice rub on them for at least 20-30 minutes, or longer, in the refrigerator
To Cook
1.Heat grill to medium-high heat
2.Cook tenderloins 5-6 minutes per side making sure to not mess with them too much, until pork reaches 135-140 degrees on an instant read thermometer
3.Remove pork from grill and let rest for 5 minutes before slicing
4.Serve and ENJOY!!

Cilantro Coleslaw

This coleslaw is light, delicious and has a little kick...perfect with the Slow Cooker BBQ Chicken or on its own!



Cilantro Cole Slaw


Serves 8

A great light and tangy coleslaw, perfect for a BBQ chicken sandwich

Prep Time - 10 min

Total Time - 2 hr

Ingredients
16 oz coleslaw mix
1 bunch fresh cilantro, stems cut off just under leaves
1/2 cup Nonfat Greek Yogurt
1/4 cup mayonnaise
2 limes, juiced
1 tbsp. chili powder
1 tsp salt
1 tbsp. pepper
1 tbsp. apple cider vinegar

Instructions
1.In a blender, or food processor, combine cilantro, yogurt, mayo & lime juice until smooth
2.Add in chili powder, salt, pepper and vinegar and mix until combined
3.Taste and adjust seasoning as needed
4.Pour sauce into a small bowl, cover with plastic wrap and refrigerate for 1-2 hours to allow dressing to thicken
5.When ready to serve pour dressing over coleslaw in a large bowl and gently toss to combine
6.Serve immediately or chill in refrigerator for 15-20 minutes and then serve
7.ENJOY!!
